The Prolific Cuke
Seems we have an abundance of cucumbers these days. Slice, dice, chop and shred - here are some of my old favorite standbys. Anyone have others?
Cukes in Cream Sauce
3 - 4 C peeled and very thinly sliced cukes (drain water if any)
1 medium sweet onion very thinly sliced
1/2 - 3/4 sour cream (enough to be creamy)
3 - 4 T cider vinegar
Dash of salt and pepper
Mix well and serve or chill if desired.
Cukes and Onions in Vinegar
3 - 4 C peeled and very thinly sliced cukes (drain water if any)
1 medium sweet onion very thinly sliced
1/3 C cider vinegar
1 T natural cane sugar
Mix well and serve or chill if desired.
Cukes and Tomatoes
2 or 3 medium cukes - cut into chunks
2 or 3 medium tomatoes - cut into chunks
salt and pepper to taste
fresh basil to taste
chill and serve
Tzatziki
1 C plain yogurt
(for a thicker consistency yogurt could be drained in cheese cloth)
2/3 C cukes peeled, seeded and shredded
1 clove garlic minced
1 T fresh lemon juice or vinegar
1 T olive oil
1 T chopped fresh dill
chopped fresh mint to taste
dash of salt
Mix well and chill.
Serve as dip with pita chips, with fish or chicken, on a gyro or just eat by the spoonful.
