My 2010 Garden
I've worked the soil in my raised beds for 4 years hoping for the kind of results I'm seeing this year. Tomatillo plants are nearly 6 feet tall and heavy with fruit. I lost count of all the tomatoes at 200 - with just 9 plants. The potatoes are practically jumping out of the ground and just keep coming. The garlic has never been bigger and the chard is a blessing with every dinner. My friend Molly thinks it's from the tent worm poop; I think it's from 4 years of composting and hard work coupled with the incredible weather.
Yesterday we put up a year's worth of pesto from just 4 plants. There are 6 more plants and I'm not sure what else to do with all of this basil! Any ideas?

That's awesome, Jennifer! How about pizza Margherita to use up some of that basil? Was also looking through Deborah Madison's "Local Flavors" cookbook, and she has a section on herb vinegars. She recommends either white wine or rice wine vinegars to use with basil. She also has a salsa verde recipe that uses basil, cilantro and mint. Sounds like some yummy ways to use up basil.
